Spicy Chicken Biryani + Tips to Avoid Whole Spices Catching in Mouth

 Last weekend I made Briyani with Chicken…I have tried making briyani many times,Each time there will be something missing in it.But last time I made the perfect briyani,After I finished making it I was so proud of myself,Yes ...the Briyani Aroma filled my house.That should happen only when you make the perfect briyani.I wrapped the Whole garam masala ingrediants in a cheese cloth so that you will get the flavours of it but wont get a bite into it (which was awful).I mixed the rice along with the masala so that the Briyani was so flavourful.I served it with Onion Tomato Raita(for recipe check this link)So please give it a try and let me know how it turned out.

Ingrediants:

Basmati Rice-2 cups
Chicken -1/2 kg
Onion-2 large thinly sliced
Tomato-1
Green chilli-4 slitted
Coriander Leaves-1 cup
Mint leaves-1 cup
Curd-1 cup
Red chilli powder-1 tblspn
Garam Masala powder-1 tblspn
Turmeric Powder- ½ tsp
Cumin seeds- 1 tsp
Whole Garam Masala-1 tbspn
Salt to taste
Cashew-10 pieces
Raisans-2 tblspn
Oil-2 tblspn
Ghee-1 tblspn

Method:

Soak the rice for around 30 min,Then drain it and set aside.

Take a muslin cloth add all the garam masala ingredients and tie it.

In a pressure cooker heat oil and ghee,crackle some cumin seeds and bay leaf.Add in the onion and fry on a low heat till brown.

Add in the green chilli and also the chicken pieces and sear the meat till it is no longer pink.


Add in the Tomatoes,Red chilli,Tumeric and Garam masala powder and stir well.

Add in the coriander and mint leaves and mix well,pour in the curd and mix well.

Add in the soaked Basmati rice and combine well.Pour in the water(For 1 cup rice add 2 cups water) and season with some salt and mix well.Put in the spice bag that we made earlier and bring every thing to a good boil.

Reduce the flame and cover the pressure cooker and cook it for 20-25 min.

When ready don’t forget to remove the spice bag and garnish with Fried Cashew and Raisans and sprinkle some coriander leaves.

Serve it with Onion and Tomato Raita.

and cook till done..After it is done remove the bag
and garnish with fried nuts and coriander leaves
