About Gujarati kadhi
A famous and traditional sweet and tangy yogurt based gravy dish from Gujarat, it is commonly known as Gujarati kadhi. It goes well with steamed rice/fulka /roti /khichdi.
Ingredients to make Gujarati kadhi
- Curd - 1 cup
- Chickpea flour/besan - 2 -2 and 1/2 tbsp
- Sugar - 1-2 tbsp
- Salt as required
- Ginger -green chili paste -1/2tbsp
- Water - 1 cup
- For tempering:
- Ghee -1 tbsp
- Mustard seeds -1 tsp
- Cumin seeds -1 tsp
- Cinnamon- 1 stick
- Cloves -3-4
- Dry red chillies- 1-2
- Curry leaves - 1 tbsp
- Asafoetida/hing - 1/4 tsp
- Coriander leaves - 1-2 tbsp / one handful
Steps to make Gujarati kadhi
- Take a bowl, add the besan, curd, salt, ginger-green chili paste, sugar and water. Mix it well and make a medium thin batter.
- Then heat a kadai with 1 tbsp of ghee, add the mustard seeds, cumin seeds, once it starts crackling add the dry red chillies, curry leaves, cinnamon, cloves and hing.
- Once it gives a nice aroma, add the curd-besan mixture and bring it to a boil. Once it starts boiling, reduce the flame and simmer for 5 mins.
- Check the seasoning and sprinkle some coriander leaves.
- The Gujarati kadhi is ready to be served with steam rice/hot fulka/roti or whatever you like.
