Preparing sweets and savories during the festivals has been a huge tradition in our India...and khova is the king of sweets here. The current generations have not eaten as much khova sweets as the earlier ones have...its all chocolate these days. Why not blend both the tastes..here's the recipe to prepare chocolate khova burfis.
For 12-15 burfis, we need
Khova : 3 cups
Milk : less than 1/2 cup
Sugar : 1/2 cup based on the sweetness preferred
Nuts : chopped almonds, pistachios and cashews 1/4 cup
Ghee : 1/2 tsp
Cocoa powder : 2 tbsps
A wide pan to spread the burfi
A frying pan
Preparation:
Heat a frying pan with a hint of ghee. Once the ghee is hot, add the 3 cups of khova to it on medium to low flame and just smoothen the khova..donot fry else it becomes dry and cannot be shaped into cubes. Once the khova is soft, add sugar and mix well, now add the milk slowly and keep stirring. The mixture becomes soft and drops from the laddle like a thick syrup. Now remove it from heat and spread only half of the mixture onto the wide pan to form the base of the burfi. Now add the Cocoa powder to the rest of the khova mixture and stir well to remove cocoa lumps. At this step, you may need to add just a little sugar incase the cocoa has reduced the sweetness, otherwise not necessary. Use dark cocoa for goodness. Now spread this chocolate mixture onto the earlier khova spread and garnish with chopped nuts. Let this air dry for a night openly and you can cut it into cubes or triangles.....these chocolaty burfis make this festive season sweeter and healtheir for the kids and all !
