Sprouted Green Gram Kosambari is one of my favourite salad. In Karnataka, it is also known as Hesarukalu Kosambari. Its usually very common in all the functions and weddings. Low on calories, high on nutrients and an absolute visual treat to see a bowlful of colourful sprouted Moong Kosambari.
Serve Sprouted Green Gram Kosambari along with Tomato Onion Sambar and Steamed Rice for a weekday meal.

Ingredients

1 cup sprouted green gram (moong)

1/2 cup carrots, grated

1/2 cup pomegranate

2 to 4 green chillies, chopped

1 to 2 tablespoons coconut, grated (optional)

Few coriander, chopped

Lemon juice as required

Salt to taste
For tempering (optional)

Oil as required

1 teaspoon mustard seeds

A small pinch of asafoetida (hing)

- 1 cup sprouted green gram (moong)
- 1/2 cup carrots, grated
- 1/2 cup pomegranate
- 2 to 4 green chillies, chopped
- 1 to 2 tablespoons coconut, grated (optional)
- Few coriander, chopped
- Lemon juice as required
- Salt to taste
For tempering (optional)
- Oil as required
- 1 teaspoon mustard seeds
- A small pinch of asafoetida (hing)
- Few curry leaves
Directions for Sprouted Green Gram Kosambari Recipe
- To begin making the Sprouted Green Gram Kosambari recipe, In a big bowl mix sprouted moong, grated carrot, pomegranate, green chillies, grated coconut, coriander leaves, salt and lime.
- In a wok/kadai, prepare a tempering. Add oil and when its hot add mustard seeds. When they splutter, pour the tempering on the sprouts kosambari/salad.
- Healthy, nutritious and delicious Sprouted moong salad is ready to serve.
- Serve Sprouted Green Gram Kosambari along with Tomato Onion Sambar and Steamed Rice for a weekday meal.
